Lemon Curd Cookies

There is a bakery where I live that sells the most delicious lemon curd short bread cookies. I set out to recreate them and was very pleased with the results. I used store bought lemon curd, which sped up the process.

Here is the shortbread cookie recipe that I used. I greased my muffin tin and pressed 1 Tbsp of the shortbread cookie dough into each compartment. I baked them for about 10 minutes, but 3 minutes before they finished baking, I pulled them out and spooned 1/2 TBSP of lemon curd in the center of each cookie and put them back in the oven. Let the cookies cool when finished baking and dust with powdered sugar.
